Easy Vegan Ube Powder Cookies Recipe

These ube cookies are soft, completely vegan (no eggs or butter) and ready in 25 minutes. Ube powder gives them a purple color and a mild flavor, similar to vanilla and hazelnut, with no hint of coffee or tea.
Ingredients (for about 12 cookies)
- 200 g flour
- 1 tablespoon plain ube powder (or vanilla for a sweeter taste)
- 80 g coconut sugar or brown sugar
- 60 ml neutral oil (sunflower or grapeseed)
- 60 ml plant-based milk
- 1 teaspoon baking powder
- 1 pinch of salt
- White or dark chocolate chips (optional)
Preparation
- Preheat oven to 180°C (350°F).
- In a bowl, mix together the flour, ube powder, baking powder, and salt.
- In another bowl, mix the sugar, oil, and plant-based milk until well combined.
- Pour the wet ingredients over the dry ingredients and mix until a soft dough forms, being careful not to overmix.
- Stir in the chocolate chips.
- Form the dough into balls, flatten them slightly on a baking sheet lined with parchment paper.
- Bake for 10 to 12 minutes: the cookies should remain soft in the center.
- Let cool for a few minutes before serving: they will continue to firm up as they cool.
Our tips
- Don't overbake them: the purple color of the ube darkens slightly during cooking, which can make them seem ready too soon. Rely on the cooking time rather than the color.
- For a more pronounced flavor, slightly increase the amount of ube powder (up to 1.5 tablespoons).
- For a gluten-free version, replace wheat flour with a gluten-free flour blend suitable for baking.
Frequently Asked Questions about Ube Cookies
Can ube cookie dough be frozen?
Yes, form the dough balls and freeze them on a baking sheet before transferring them to an airtight bag. Bake directly from frozen, adding 2 to 3 minutes to the cooking time.
Do ube cookies taste like coffee or tea?
No, ube has a mild flavor, similar to vanilla and hazelnut, with no hint of coffee or tea.
Can vanilla ube be used instead of plain ube?
Yes, this will slightly enhance the sweet and vanilla flavor of the cookie; you can then reduce the added sugar a little.
