Recette ube latte maison : chaud, froid, nature ou vanille

A homemade ube latte can be prepared in 5 minutes: dilute 1 to 2 teaspoons of ube powder in a little hot water, then add hot or cold milk depending on the desired version. The only rule to follow to avoid lumps: never add milk directly to the powder.

The basic recipe (hot)

For one cup (approx. 250 ml):

  • 1 to 2 teaspoons of ube powder (Plain ube or Vanilla ube)
  • 2 to 3 tablespoons of hot water (not boiling)
  • 200 ml of milk, plant-based or dairy, according to your taste
  • A sweetener if needed (honey, agave syrup, coconut sugar)

Preparation:

  1. Pour the ube powder into the bottom of your cup.
  2. Gradually add the hot water, whisking vigorously until you get a smooth, lump-free paste. This is the most important step: if you pour the milk directly onto the powder, it tends to clump and is difficult to dissolve.
  3. Heat the milk separately, without letting it boil.
  4. Pour the hot milk over the ube paste while whisking, or use a milk frother for a creamier texture.
  5. Sweeten to your taste and enjoy immediately.

If you use Vanilla Ube, you can reduce or even eliminate the sweetener: the powder is already slightly flavored and sweetened.

The iced version (iced ube latte)

For a fresh version, the logic is the same, with one extra step:

  1. Dilute the ube powder in hot water as for the classic version, until you get a smooth paste.
  2. Let it cool down for a few minutes.
  3. Fill a glass with ice cubes, pour cold milk over it, then add the diluted ube paste.
  4. Mix well before enjoying.

Aesthetic tip: pour the ube paste last, slowly, to get a gradient effect in the glass rather than a uniformly mixed drink.

The "dirty" version (with an espresso shot)

For those who want to keep some caffeine while enjoying the taste of ube, simply add a shot of espresso over your ube latte, hot or iced, just before serving. The coffee contrasts with the sweet vanilla of the ube, without completely masking it.

Bubble tea version (to twist your ube latte)

Want to go further than a simple latte? Place a few cooked and cooled tapioca pearls at the bottom of your glass before preparing the iced version. You get a homemade ube bubble tea, as beautiful in photos as it is delicious to drink, in just 2 extra minutes of preparation.

What to pair with your ube latte?

To turn your latte into a true little pleasure ritual, pair it with a sweet treat that stays within the same flavor palette:

  • Our vegan ube cookies, to stay in the same universe from latte to cookie.
  • A granola bowl with red fruits for a complete and colorful breakfast.
  • Black sesame cookies or an iced mochi, for a gourmet touch that complements the vanilla note of ube well.

Our tips for a successful ube latte

  • Always dilute the powder in a hot liquid before adding cold milk. This is the number one cause of lumps.
  • A milk frother changes everything: the texture becomes much closer to that of a coffee shop latte.
  • Coconut or almond milk pair particularly well with the taste of ube, but all milks work.
  • Adjust the amount of powder according to the desired intensity: one teaspoon for a mild flavor, two for a more pronounced taste and a more intense color.

Frequently Asked Questions about the ube latte recipe

How to avoid lumps in my ube latte?
Always dilute the powder in a little hot water while whisking before adding milk, never the other way around.

Yes, with any plant-based milk (almond, coconut, oat, soy), or even just water for a lighter version.

Which powder to choose for the recipe: plain or vanilla?
